Le Guaite di Noemi Amarone della Valpolicella DOC 2013

Grapes are dried for three months before pressing and mature in French oak for four years, followed by six years of bottle aging. A gorgeous bouquet of dried cherry, black fruits, and hints of balsamic and fennel. Very smooth palate despite characteristic bold acidity, with plenty of red and black fruits, and a lengthy complex finish.

Classic paring is Risotto all’Amarone or fresh pasta with duck sauce. Also try braised beef and slow-cooked dishes like Italian pot roast.
